The above quote from Julia Child not only applies to cooking and baking, but in life too.

Food has a way of making us smile and bringing us together. This weekend we will all be celebrating this wonderful Heritage Day around the table or a braai. With the long weekend and heritage day upon us I thought it would be fitting to share two of my favourite dishes I enjoy baking.

The first recipe I will be sharing with you is my famous Lemon Meringue Pie. My friends and family love when I bake this and it’s always a sure winner.

Lemon Meringue Pie

Biscuits base:

  • Half a packet of Marie or tennis biscuits
  • 60g melted margarine

Method:

  1. Bind the biscuits with the shortening (margarine).
  2. Press into pie plate and chill.

Filling:

  • 1x 397g tin condensed milk
  • 125ml lemon juice
  • Rind of one lemon
  • 2 eggs separated
  • 25ml castor sugar

Method:

  1. Preheat oven to 180°C.
  2. Mix together the condensed milk, lemon juice, rind and egg yolks.
  3. Pour into the prepared biscuit base.
  4. Beat the egg whites until soft peak stage, then gradually beat in the castor sugar. Beat until stiff.
  5. Cover the filling with meringue.
  6. Bake for 10 minutes or until light Brown in colour.
  7. Chill before serving.

My next favourite dish that I enjoy baking is Milk Tart. This dish is a Proudly South African dessert that will definitely be fitting for this Heritage Day.

Milk Tart 

Crust:

  • 30g margarine
  • 25ml sugar
  • 1egg
  • 125ml flour
  • 3ml baking powder
  • Pinch salt

Method:

  1. Preheat oven to 180°C.
  2. Cream margarine and sugar till light and fluffy.
  3. Add the egg. Beat well.
  4. Add sifted dry ingredients to creamed mixture. Mix well.
  5. Press into a pie dish, prick base with a fork.
  6. Bake blind for +/_ 10 minutes. Remove paper and return to oven for a further 5 minutes.

Filling:

  • 250ml milk
  • 15g margarine
  • 2 eggs
  • 20ml flour
  • 60ml sugar
  • 20ml cornflour
  • Pinch salt
  • 3ml vanilla essence
  • 1ml almond essence

Method:

  1. Boil milk and margarine over a medium heat.
  2. Combine the remaining ingredients.
  3. When milk comes to a boil, remove from heat.
  4. Add a little of the hot milk to the egg mixture. Mix well. (This prevents the mixture from curdling.)
  5. Add the warmed egg mixtire to the remaining milk, return to the heat and stir continuously until the mixture thickens.
  6. Pour immediately into the baked crust and sprinkle with cinnamon.
  7. Allow to cool.

I truly hope that these recipes I have shared with you with leave you and your guests sweetly satisfied this Heritage Day.
